I swear, my love of writing and discovering the blogging world is alive and growing! However, my time seems to be shrinking and shrinking! Such is life, right? Rewind for a moment…Way back at Christmas, I received my first cast iron skillet from Ronnie’s (my special someone 🙂 ) mother and it was one of the BEST things I got. There’s something about cast iron that makes everything taste better. I bust that sucker out almost every week. And my latest experiment? A Bacon, Chicken & Brussel Sprout Hash!
Ok, so I don’t know if it actually qualifies as a hash but I wasn’t sure what else to call it…whatever name you come up with, the important thing is that it tastes good! Full of sweet potato, brussel sprouts and chicken, it filled me up and made for a great lunch the next day. And, well, bacon…need I say more!
I’ve been on a spicy kick lately. And by spicy, I mean what most people probably call pretty mild, mild heat. This dish has just the right amount of some warmer spices that call my name without completely altering my palette. It’s a win, win! Between the veggies & seasonings, it’s healthy, comes together in a jif and super colorful! And since I’m a huge visual person, the greens and orange drew me in like there’s not tomorrow. Try it out and tell me what you think!
Bacon, Chicken & Brussel Sprout Hash
– 1 sweet potato, cubed
– 1 chicken breast, cubed
– 4 slices of bacon, diced
– 2 cups brussel sprouts, halved
– 1 tsp garlic, crushed or chopped
– 2 tsp paprika
– 1 tsp chili powder
– 1/4 cup cheese (I used a Mexican blend)
1.) First things first – the bacon! Take the diced bacon and crisp it in the skillet. Once it’s crispy and the fat has rendered out, remove the bacon and set aside.
2.) Throw the garlic into the bacon fat and cook for 2-3 minutes.
3.) Add the chicken to the skillet, brown all sides and cook it all the way through. Just like the bacon, remove from the skillet and set aside.
4.) Put the sweet potato and let it sizzle for a few minutes and then add the brussel sprouts. Cook both of them for 5-ish minutes until they soften.
5.) Add the bacon bits and chicken back into the skillet.
6.) Sprinkle the paprika and chili powder over the top and stir it all together.
7.) Top with the cheese let let it melt for a moment.
And the only thing left is to serve and enjoy!
