Get ready for some delicious Fake-out Take-out! I love Chinese food just as much as the next girl but I’m not a huge fan of all the grease and not so healthy stuff that goes with it. Now I’m not saying this is a healthy dish, but I do feel a lot better when I know exactly what ingredients go into it. Let’s get to it!
– 1/2 cup olive oil
– 1/2 cup low sodium soy sauce
– 1-2 cloves of crushed garlic
– 2-3 tablespoon brown sugar
– 1 teaspoon of freshly grated ginger
Whisk together and place into a plastic bag with 1 pound of sliced chicken. I let it sit overnight to really let the flavor set in (4 hours at least works best).
Once the chicken is marinated, the rest is a quick fix for dinner. 🙂
Simply heat 1 tablespoon of olive oil in a pan and sauté 1/2 an onion for a few minutes until they start to soften. Add the chicken and 1/2 of the marinade into the pan and cook thoroughly. (The sauce will make it nice and tender.) Once the chicken is cooked, add your choice of veggies. I included 1 green pepper, 1 orange pepper, and 1 cup of snow peas. Let it cook together for about 5-7 minutes until the veggies are cooked.
While that’s going, cook your favorite brand of Lo Mein Noodles according to package. Rice or any other Asian inspired noodles work great too. Once the noodles are done, drain them and add to the chicken and veggie pan. Mix well to coat the noodles with the sauce.
Now for the best part – serve and enjoy! Personally, a cold beer never hurts so this Shocktop was a perfect match!
