Oh hello there!
I had a unique-to-me craving the yesterday…I wanted to bake something with caramel. I like caramel as much as the next person but can’t remember a time where I flat out craved it. And, well, I just couldn’t say no to whipping some up.
This Homemade Caramel Sauce is super easy and lusciously delish! I probably could have drank it straight out of the pot but I refrained and held out for cupcakes (coming later this week 🙂 ). I’ve made this a time or two before over the past 5 years and it never ceases to amaze me how this sweet, gooey sauce makes anything taste better. On top of cupcakes, tarts, or even a little in Greek Yogurt – I swear adds the right amount of sweetness to anything.
The Caramel Sauce is the perfect consistency – not so thick that it can’t spread and not so thin that it goes everywhere. If you did want the sauce a little thicker, simply stir over heat for a little longer after adding the half & half is added.
Homemade Caramel Sauce
– 1/4 cup water
– 1 cup sugar
– 1 stick of butter (cut up into pieces for easy melting)
– 1/2 cup Half & Half
– 2 teaspoons of vanilla
1.) In a sauce pan, heat on medium-high and combine water and sugar. Stir until the sugar is completely dissolved.
2.) Increase the heat to high and cover the pan. Boil the sauce for 2-3 minutes.
3.) Uncover and continue to boil until the syrup starts to darken and brown around the edges. (Sometimes judging the color is a guessing game so see below for how it should look.)
4.) Remove from heat.
5.) Stir in butter until melted.
6.) Once butter is melted, add the Half & Half, stirring continuously. (Tip: the sauce might become lumpy. If it does, simply place on the heat and continue to stir until the sauce is smooth. Then remove from heat and keep going).
7.) Stir in vanilla.
8.) Serve warm, at room temperature or refrigerate up to 1 month.
This does make about 1 to 1 1/4 cups. I used probably about 1/3 on cupcakes and I’m saving the rest…I’m thinking an apple tart or taking a stab at caramel ice cream of sorts.
So give it a try and let me know what you think! Stay tuned for a Caramel Vanilla Cupcake!
