Some days I feel like Munchies is my middle name! Especially on busy days, snacks are the way to go! Making my own snacks has been a staple in my eating habits – it saves money, is healthier, and usually tastier than some of the common snackables out there.
This snack attack motivation came in the way of Granola Bars!
– 3 cups of Old Fashion Oats
– 1 tablespoon of Cinnamon
– 1/2 cup of Raisins
– 1/2 cup of Dried Cranberries
– 1/2 cup Honey
– 1/2 cup Olive Oil
Next scoop the mixture into a pan lined with parchment paper. (Makes removal a whole lot easier!)
Bake at 350 degrees for 20-25 minutes. After the bars come out of the oven, I’ve found that covering and moving them into the fridge to fully set isn’t necessary, but can’t hurt! And since North Carolina is currently 100 degrees most days, the cold storage firms the bars up nicely. After a few hours, take them out of the pan and slice to the desired size.
These are great make ahead snacks and very easy to separate and store independently for a grab-n-go lifestyle.
Last, and certainly not least, ENJOY!
