I don’t know about you, but I always begged my mom for fruit roll-ups as a kid! I mean what kid doesn’t want a fruity, sugaring, sticky, gooey thing that will turn your tongue all sorts of colors? With trying to limit the sweet/sugar intake lately, those once loved rolls of goodness were out of the question when a craving hit me the other day. Instead, I began playing around in the kitchen to recreate them and satisfy my sweet tooth (a tall order to say the least)! The result? There delicious Homemade Paleo Peach Fruit Roll-ups!
Luckily, I had some frozen peaches left over from the summer that I had cut up and stored. Peaches are one of my favorite fruits but I could only eat so many of them throughout the warmer months. They are so juicy, sweet and succulent here – it was almost impossible to not stock up and eat my fill of them! If peaches don’t tickle your fancy, simply use any fruit you have on hand or enjoy the most. And if you’re feeling a little crazy, mix ’em up! I think I’ll be trying a mixed berry version next!
These sweet snacks are super simple but do take a little time and patience. You have to cook them low and slow to get the full fruit leather goodness. Here’s how you do it:
Homemade Paleo Peach Fruit Roll-ups
– 3-4 cups of peaches (pitted and sliced)
– 2 tablespoons of honey (I have a feeling maple syrup would work great too)
– 1 teaspoon of cinnamon (optional)
1.) In a saucepan, combine all ingredients over a medium to medium-high heat.
2.) Let simmer until everything is combined and the the peaches are soft.
3.) Put sweet, fruit mixture into a blender or food processor and blend until combined.
4.) On a baking sheet lined with parchment paper, pour the mixture and spread evenly with an off-set spatula or spoon.
5.) In a 200 degree oven, bake the rolls for 5-6 hours.
6.) When they are taken out of the oven, let them cool on the pan before peeling off of the parchment paper and cut with a pizza cutter.
7.) Roll up the strips and enjoy!
