Oh breakfast! It’s pretty much my favorite thing ever! And this Mango Avocado Toast makes it extra delicious and packs a punch.
I’m a huuuggeee breakfast fan. Like if I don’t eat it, I can pretty much kiss productivity away for the day. My mom always said it was the most important meal of the day and for me, it’s so true! Seriously, I’m always fascinated with people who can skip it and still function. Not me!
A go-to breakfast is eggs. I could eat them every single day and not get bored. But every once in a while, I get inspired and have a little extra sumthin’ sumthin’ with it. And today is that day.
Mango. Avocado. Toast. It seriously changed my morning! It’s got protein, healthy fats, sweetness from the mango, and a hearty crunch. I’ve been drooling over avocado toast that has been all over Instagram for months and finally made my own. I don’t know what took me so long and I’m never looking back.

Of course, every avocado toast recipe starts with a good, grainy bread. I used whole 12 grain bread from Arnold Premium Breads and absolutely loved it! I’m a sucker for any bread that has a lot of grains that you can actually taste and see the different grains and seeds. You can use whatever bread you’d like as long as it can hold up to the avocado and egg. And if it doesn’t, no shame in using a fork. 🙂
On to the Mango Guacamole. I used the recipe I posted last week (pic above) because I had a little left over and because it was freaking delish! (It’s below for you, too). Not going to lie, I was nervous about adding mango to a classic Avocado Toast with and egg. I love eggs and avocado together and love it! It’s a very savory flava combo that I haven’t seen too many with fruit.
Let me tell you! I was so so so pleasantly surprised about it and am already looking for other ways to incorporate fruit in it. Since the mango is just one part of the guacamole, it’s not overly sweet and is more of a pop of juiciness here and there.
And when in doubt, stick an egg of on it, right? Like I said, the more eggs the better for me. It really gives me an extra boost in the morning and is almost a comfort food. Dat yolk, tho’! So good!
