I’ve been trying pretty hard to reduce the amount of sugar I take it and have been doing decently well at it – far from perfect but I’ll take it! One of my biggest challenges are snacks. I’m a huge snacker and nearly every granola bar, cracker and pretzel out there has a lot of sugar and other additives that I’m not a big fan of. So I started poking around to find sugar free and grain free granola bars that I could whip up and still feel good about what was in it.
After seeing a few different ways to make nut bars, I came up with a simple recipe that was perfect for me. And it’s super easy to mix up the ingredients to meet your needs – pick any nuts and dried fruit you want to make it your own. My version is packed with nuts to keep me full throughout the day and give me energy to tackle everything on my plate.
I’ve made granola bars before and I love finding new ways to make snacks. These did not disappoint! The cinnamon and nutmeg made the kitchen smell like the holidays while cooking and they had the right amount of crunch to keep my mouth busy. Not to mention, they were powerfully energizing and made that 2:00 feel like nothing!
So give them a try and let me know what you think! Here’s how I made Paleo Nut Bars:
– 2 cups of pecans
– 1/2 cup pistachios
– 1 cup almonds
– 1/2 cup chopped dates
– 1 tablespoon vanilla
– 1 teaspoon cinnamon
– 1/2 teaspoon nutmeg
– 3/4 cup egg whites (I use ones from a carton)
1.) Blend 1 1/2 cup of pecans and 1/2 cup of almonds in a blender or food processor.
2.) Chop up remaining nuts into pieces as big or as little as you like.
3.) In a bowl, combine the blender and chopped nuts, the dates, vanilla, cinnamon and nutmeg.
4.) Add in the egg whites as the binder.
5.) Press the mixture into a 9X9 that’s been lined with parchment paper.
6.) Bake in a 350 degree oven for 15-20 minutes.
7.) Let cool for 5-10 minutes before cutting into bars.
