If you couldn’t tell by the title, it’s PUMPKIN time!! Shocking, I know. But it’s so good and I love the fall and all the warm flavors that comes with it. This Pumpkin Cocoa Granola offers a subtle spice without being overly sweet, making it the perfect pairing for your yogurt, berries and so much more.
As much as pumpkin flavored everything is easily the #1 trend from Labor Day to Thanksgiving, it’s very easy to get carried away with it. Anyone else seen the Pumpkin Spice Hotdog? Now that’s just a little too much for me. Instead, I’m all about the natural pumpkin flavors you can create to add a hint of warmth to a dish without tasting artificial. This granola is jammed packed with wholesome ingredients that taste great together and cure my pumpkin fix.
There will be tons of pumpkin theme recipes made in my home this year, like every year. However, this is becoming a staple already! I’ve made 2 batches and wouldn’t put it past myself to make a 3rd in the upcoming weeks. It’s baked for an added crunch and includes all my favorites. Chia Seeds, Hemp Hearts, Flax Seeds, Cocoa Nibs…and pumpkin! Duh! I used both pumpkin puree and pumpkin pie spice to make sure it has just the right amount of flavor in it without being artificial tasting.
With all the nutrients packed into this, the granola is healthy and will give you the boost you’re looking for. Of course, it’s highly customizable, too. Add your favorite nuts, seeds, rice puffs, etc. to make it your own for you and your family.
I ramped up the flavor with added spices like cinnamon, nutmeg and pumpkin pie spice to give it a true fall feeling. Whether you sprinkle in on your coconut yogurt with berries or add a splash of milk, this granola makes for a quick and easy breakfast. Or snack. Or even dinner when you’re feeling lazy. You’re not alone on that last one, I’ve totally had a bowl of this for supper….everyone loves brinner so it’s all good. 🙂
This Pumpkin Cocoa Granola also makes for a great snack to bring to work and school. I’ve been taking it a couple times a week to work when I feel like nibbling on something. Stick it in some Tupperware or a mason jar and you’re good to go.
Oh! And Cocoa Nibs! These add a level of complexity to the flavors that will wake up your mouth. The trick is to not add too many in so when you get some in a bite, it’s a nice surprise. Not going to lie, it took me forever to start liking Cocoa Nibs. They can be bitter and were not my favorite thing when I first tried them. However, 2ish years later, I’ve grown to love them and try to incorporate them into recipes whenever possible. Again, in small amounts. I do think they can overpower a dish easily so I try not to overdue it.
