I don’t know what it is about this summer in particular, but I swear I’ve been drinking lemonade by the gallon! I have a feeling the 100 degree weather and ridiculous humidity of North Carolina leaves me craving something cool and sweet. With tasting different blends almost every time I get a drink, the thing I could could do with out….sugar! Most lemonades out there have so much sugar that I feel like I need to brush my teeth after drinking. My solution? Make my own lemonade.
Behold — my Refreshing Raspberry Lemonade! Enjoy!
Refreshing Raspberry Lemonade
– 1/2 cup sugar
– 1/3 cup lemon juice
– Juice of 1 lime
– 1/2 cup raspberries
Over medium heat, combine sugar, lemon juice, and lime juice. Stir until the sugar has melted completely and add in the raspberries. Continue to stir over heat for 3-4 minutes so the raspberries have a chance to burst and release all their juicy goodness and flavaaa into the mixture. Take it off the heat and let it cool to room temperature.
Pour the delicious raspberry syrup into pitcher and cover with ice and fill with water. Chill for a couple of hours before serving for that refreshing taste we all know and love. There will be pulp in this from the raspberries and lemons so if that’s not your style, simply run the raspberry syrup through a strainer.
Now for the best part! Sit back, relax, and enjoy the sun!
