Oh hey there! Let’s talk Breakfast Cookies….they are everywhere right now and for good reason. Hello? Cookies for Breakfast? Sign me up! I’ve pretty much made some version of them for the past month to have with my morning smoothie. My favorite so far are these Vegan Almond Carrot Cake Breakfast Cookies.

Unlike some of the variations I’ve tried, these Carrot Cake Breakfast Cookies are super moist, chewy and don’t crumble everywhere. I try to wake up early enough every morning to make a decent breakfast and relax before starting the hustle and bustle so they are perfect for making ahead of time. It makes my routine so much more streamlined and gives me time to watch the news. Gotta stay up to date on all the current events 🙂 And for those days that sleeping an extra 30 minutes beats everything, I’ll grab them to go. Makes life easy that way.
Now for the important stuff…how it tastes! A lot of carrot cake versions of things (bars, muffins and even cookies) that I’ve tried tend to be a little too sweet for me when I’m wanting it for breakfast. You don’t have to worry about that here! These breakfast cookies are the perfect combination of sweet and savory. The maple syrup and carrots mixed with the almonds and warm spices hit all the right notes. Each bite has a stuble hint of all spice and cinnamon that’ll remind you of an Easter dessert (minus the cream cheese frosting, of course).
This combo is a winner for sure but you can easily customize these to swap out the almonds with walnuts, pecans, or any nut of your choosing. Looking for even more sweetness in these chewy delights? Try adding your standard raisins, golden raisins, dates or any type of dried fruit. It’s all about what you enjoy so you do you!
Between the oats, chia seeds and ground flax, it only takes one of these babies to hold me over the rest of the morning. (Ok, let’s be real, sometimes that’s only until 2nd breakfast at like 9:30-10am. But that’s because I like to eat 🙂 ) Even though they are filled good fibers, omegas and even veggies, I tend to have both a cookie and a smoothie most days if I have a busy morning ahead of me and know that snacking might not be an option. Most days, it’s the perfect amount to last me until lunch. It keeps me full without feeling bogged down by a breakfast filled with fat and oils that I might get on the run.
